  • 2 cups of Quaker Oats
  • 1 Teaspoon of Vanilla Extract
  • 2 Large Bananas
  • 1/4 Teaspoon of baking powder 
  • 1 1/2 Cup of Almond milk   
  • 3/4 cup of fresh blueberries
  • 1/4 Teaspoon of salt
  • 1 scoop vanilla protein powder


  • Preheat oven to 350 degrees.  

  • Blend the oats first into oat flour. After the oats are ground add the baking powder and salt to the oats in a bowl.

  • Add pureed banana, milk and vanilla to the oat mixture and mix until just combine.

  • Add in blueberries and optional protein powder and pour into mini muffin tin (like cupcakes).

  • Bake for 20-25 minutes.

    Let muffins cool in pan until they are cool enough to touch. Remove from pan and let cool. Enjoy!
